Gluten Free Buckwheat Vegan Mac and Cheese

Somewhere back in 2017 I was really digging into Nutritional Yeast. Because it tastes soooo fine. And because the added Vitamin B12 (as I phased Marmite out) became important. I’ve never eaten Mac & Cheese, lol but Heloise told me what I created tasted just like it… hence the name Vegan Mac and Cheese!

With the earthy nuttiness of buckwheat, the cheesy goodness of nutritional yeast, and the health benefits of turmeric, this dish is super delicious on its own, with greens or part of a Big Buddha Bowl.

With just a few simple ingredients, you’ll be creating this delicious and satisfying Vegan Mac and Cheese.

Ingredients:

2 cups cooked buckwheat groats
1/4 cup nutritional yeast (fortified with B12)
1/2 teaspoon turmeric powder
1/2 teaspoon garlic powder (optional, for added flavor)
Extra Virgin Olive Oil
Salt and pepper to taste

Optional Toppings:

Fresh herbs (such as parsley or chives) for garnish
Crushed red pepper flakes for a spicy kick
Ground nuts (such as cashew or peanut)
Vegan Protein Powder (such as pea protein or hemp protein)

Methodology:

Cook the buckwheat groats according to the package instructions. We like the groats still ‘chewy’. Once cooked, drain any excess water and set aside.
In a small bowl, combine the nutritional yeast, turmeric powder, garlic powder (if using), salt, and pepper. Mix well to create a flavorful seasoning blend.
Mix a splash (you decide) of Cold Pressed Extra Virgin Olive Oil to the seasoning and mix.
Add the cooked buckwheat groats to a large mixing bowl. Pour the seasoning blend over the groats and mix gently to coat them evenly. Make sure the groats are well coated with the cheesy-turmeric mixture.
Taste. If you want it more cheesy add more Nutrtional Yeast. If the Turmeric taste is too strong try adding a splash of plant milk (coconut milk is great).
Decoraation: if desired, heat some extra (uncooked) buckwheat groats in a skillet over medium heat for a few minutes to warm them up and toast them. This is a GREAT crunchy snack and it will look pretty sprinkled on top of your mac and cheese.
Serve your Buckwheat Mac & Cheese in bowls or plates. Garnish with fresh herbs and crushed red pepper flakes if desired, adding an extra pop of color and spice.
