Lebanese Twist

#1 Carrot & Cumin

This is great favourite of ours, we have it a lot because its healthy, tasty and super easy to make. All you need is:

  • Carrots
  • Cumin
  • Orange
  • Pumpkin Seeds (Optional)

Method: Peel the carrots and then use either a julienne peeler (our preference) or a spiralizer to create carrot noodles. If you don’t have either of these to hand you can also use a standard peeler to make wider, flat carrot noodles.

Dry heat the cumin in a pan until aromatic, then mix with the juice from an orange. Mix well and then stir into the noodles.

Pumpkin seeds are a great addition but not essential.

#2 Beetroot Pickle

Another favourite of ours and another super easy, super healthy dish.

  • Beetroot
  • Organic Apple Cider Vinegar

Method: Peel the beetroot and then use either a julienne peeler (our preference) or a spiralizer. And simply dress with apple cider vinegar. That’s it… delicious.

#3 Raw Tabbouleh

This Lebanese inspired raw dish is perfect as part of a Lebanese Banquet or part of a wonderful Buddha Bowl…

  • Cauliflower
  • Curly Leaf Parsley
  • Olive Oil
  • Lemon
  • Cumin Seeds
  • Salt & Pepper
  • Pumpkin Seeds (Optional)


Wash and dry the cauliflower, when making cauliflower rice we’ve found it seems very important to let it dry first otherwise the cauliflower tends to taste a bit weird! So, wash and dry… then add it to the food processor a few florets at a time and roughly chop to the size of rice grains or slightly bigger for the best results. If you haven’t got a food processor, it still works well finely chopped by hand… just a little more time consuming!

Next dry fry the cumin seeds until aromatic and then mix about equal measures of olive oil and lemon juice together with the seeds. Add salt and pepper to taste and mix into the riced cauliflower

Finally, wash and finely chop the parsley (curly leaf parsley works the best) and mixed into the cauliflower. Garnish with a few pumpkin seeds and whole parsley leaves.

#4 Turmeric Courgette

Another very quick and simple dish… and again we make this in a number of different ways. This time round it was made using the following:

  • Courgette
  • Tahini
  • Turmeric
  • Water
  • Salt & Pepper

Method: Peel the courgette and then use a spiralizer (or julienne peeler, etc) to create courgette noodles.

Mix the tahini with water, it will initially thicken(!!) but keep adding a little at a time and stir until it is a thin dressing. Then add in the turmeric powder, salt and pepper (pepper is important to boost the absorption of curcumin from the turmeric).

Add into the courgette and again, thats it… another quick, simple and tasty dish.
